Our published 2024 field evaluation at BJ’s Restaurant & Brewhouse in Culver City examined pH7X® using ATP measurements and rinse-water dip slides. The report describes an initial 2% deep clean followed by 1% recirculation cleaning and a comparison with BJ’s previous caustic protocol.
In the reported 15-minute comparison, two lines cleaned with 1% pH7X® had post-clean faucet ATP readings of 1 and 0. Two different lines cleaned with 2% caustic had readings of 2 and 0. Both approaches produced low readings under those field conditions; the comparison does not establish equivalent results across all equipment and operating conditions.
ATP readings indicate ATP-containing residue and depend on the instrument and sampling method. They do not establish microbial kill percentages or log reductions. The report describes the dip slides as room-temperature observations rather than laboratory-controlled counts.
The report records approval for pH7X® to be used across BJ’s 219 locations at the time. These field results support continued evaluation of a cleaning approach that reduces caustic handling. Equipment lifespan and wastewater treatment benefits require separate measurements.
